Cavo Tagoo Santorini welcomes one of Greece’s most influential chefs, Ari Vezené, and his eponymous bistro, widely considered as an Athenian locals favorite for over a decade. Surrender to the miraculous hues of the sunset against the dramatic backdrop of the spell-binding Caldera while enjoying flavors fueled by the aromas of an open fire grill, the traditions of a Greek taverna and the elegance of a French bistro.

Vezené is a Greek inspired bistro and open fire grill, motivated from personal views on local traditions. The kitchen boasts local seafood, line caught fish and grass-fed sustainable meats. As the kitchen puts it, “We cook for ourselves, our families, and for you with honesty and intimacy as if you were invited to our home”.

Ari is self-taught and is known for being the first chef to introduce to Greece, extensive dry aging, nose to tail ethos, whole animal butchery and the concept of a modern-day bistronomy. When asked about his food, his Greek roots and his New York birthplace, he quotes: “We are trying to promote a new approach to Greek cuisine, one that does not draw up geographical borders but allows ample room to rewrite the chapter; one of personal cooking.”
